The Butcher Shop: Lamb & Liver



I wanted to branch out and cook a different kind of meat for the family rather than just continuing with the same-old/same-old, right?! So I found a chunk of lamb while making the grocery order, and then I found two lamb recipes to try with it.... 🐑 

The first lamb recipe called for 6 lamb chops (1 chop = ~4 ounces), and the other one called for 250 grams of British lamb mince (1 cup/8 ounces). Six chops is 24 ounces, plus eight ounces is 32 ounces/2 pounds - so ordering a 2-3 lb package of lamb breast from Walmart  should easily cover both recipes, don’t ya think? 🤔 


Except come to find out, a lamb breast and a lamb chop are two very different items! One is mostly meat, while  the other is composed predominantly of fat. I cooked half the split lamb breast for dinner the other night, and between the two of us my husband and I ate all the meat we were able to extract from the bony fat. Good thing it was just us that night, lol! Since Eeyore wanted a frozen dinner, Tigger & Ruby had already left for their houses, and Roo had a joey-purée to eat. That would’ve been a difficult meal to split any farther than two ways, but it did have a good flavor at least! And it made for a good discussion about why God wanted  lambs for sacrifice - since they do smell amazing, and since they ARE so fatty (weighty/glorious/glorified), and since the fat is God’s portion and thus the fat is not intended for human consumption.

Then I had also ordered some beef liver, to make liver & onions last night. The onions were great; we called them onion pancake rings, since they were like pancakes, but with a bit of onion flavor and with the ring shape. The liver, though, was quite unappetizing. Bland and bitter, even though I had rinsed the liver slices and then soaked them in milk for THREE hours (longer than the time recommended for “removing the bitter taste”). 


We determined never to buy liver again, and we discussed possibly offering the leftover meat to our neighbors for their dogs. But with covid and with not wanting to be wasteful or anything, we eventually decided to try a “liver skillet supper” tonight to use up the liver-meat in a hopefully-more-palatable way. We’ll see how it goes. 😉
