Mocha Volcano Cake

We love coffee at my house! ☕️  So of course, Christopher Robin & I had a coffee-flavored wedding cake. The recipe my friend used (from Martha Stewart) is no longer available online, but here’s a similar recipe: Mocha Cake (shoutout to Mel's Bakery in Barbourville, KY) Coffee is a fitting illustration of marriage; because while black coffee is good (and even preferable to some people, as it was to me before getting pregnant with Roo) - most people would agree that perfect coffee requires a perfect blending of the black-coffee base with some combination of milk/creamer & sugar/sweetener, just like a perfect marriage requires a perfect blending of one man & one woman into a lifelong one-flesh union. “No longer two but one” (Mark 10:8).  One Flesh Marriage   (Nancy Cambell, Above Rubies)

Mini Pooh Pizzas -  https://family.disney.com/recipe/mini-winnie-the-pooh-pizzas/ Spray cookie sheet and set aside. Roll out pre-made pizza dough. Separate into sections, and form each section into a Pooh-head with ears. Transfer to cookie sheet and top working pizza sauce, mozzarella cheese, black-olive eyes & nose, and pepperoni eyebrows & nose crinkle. Bake according to pizza-dough package instructions. Pooh Chips & “Honey” Cheese Dip -  https://family.disney.com/recipe/winnie-the-pooh-chips-and-dip/ Cut 12 soft tortillas into little Pooh-head&ears shapes. Bake at 350 about 10 minutes, or till crisp. Whisk 1 Tbsp flour & 1 Tbsp butter in pot on medium heat till it becomes foamy. Whisk in 1/2 cup milk and continue stirring till it simmers and then thickens enough to coat back of spoon. Turn to low heat and stir in 1 cup shredded cheddar cheese till melted. When the family’s fresh out of dessert, then it’s time to bake something sweet with Ruby. She wanted to do a chocolate cake, and we had a few very-ripe bananas, so what do I ask our kitchen EchoDot? Well, of course.... “Alexa, show me banana chocolate cake recipes.” And wa-la!   Cherry Coconut Cauliflower Ice Cream Cake recipe Base: ¾ cup raw, shelled pumpkin seeds (pepitas) 1 soft medjool date, pitted 1 tbsp coconut oil 1 tbsp agave (or maple syrup, or a similar sweetener of choice) Filling: 1½ cups boiled or steamed cauliflower florets 4 tbsp coconut cream (from a chilled can of full-fat coconut milk) 3 tbsp coconut oil, liquefied 3 tbsp agave (or maple syrup, or a similar sweetener of choice) 1 tsp pure vanilla extract (or ½ tsp raw ground vanilla bean) ⅜ tsp salt Additional Cherry Layer: ¼ cup fruit-sweetened black cherry jam  ⅛ tsp salt Optional Toppings: edible dried rose petals, rose buds, and a bit of lavender nuts
