Mocha Volcano Cake

And I so wanted to make you/us a really nice cake for our anniversary today!

Amidst child-rearing & housekeeping & home-educating & hospital-facilitating & everything else. Although I didn't find a legit cake board to put it on, there was a big enough paper plate Bfor the base cocoa/coffee layer. Then the first layer of creamy espresso filling, then the second chocolate cake layer, then another espresso-filling layer, then the final layer of chocolate cake, So far, so good. Next to start with the creamy chocolate espresso frosting - which was too stiff, so I stirred in some milk. But when I started frosting the cake, then the cake started falling apart.

And then my 7-year-old started hollering questions and all kinds of stuff, and I'm just like "Please go play! I really need space to focus on saving this cake!"

Eventually it worked out fine, just more volcano-y than it was originally intended to be. But hey, we HAVE been trying to do various volcano-related activities to prepare for our family-trip to see an active volcano in a few months. So that works out! I apologized to my little girl for being too hard on her & asked her forgiveness, and we hugged.


Now here we sit, as Canon in D plays & her little brother naps, and we wait for Daddy to get home so we can have our special dinner & special cake and then watch our wedding video as a family. I'm pretty excited that the kids are old enough to watch it with us this year!!
