Okay, so I used whole-wheat flour instead of almond flour, white sugar instead of date sugar, and 4 Tbsp butter-flavored shortening instead of 2T coconut oil + 2T ghee. And the product was okay, with a good flavor - but kinda dry, making it a good cookie to go with our decaf coffee this evening. ☕️πŸ˜‰

Perhaps adapting a paleo recipe is not the best way to find a super-great cookie, lol. πŸ˜‚ πŸͺ
